I’m not going to lie….I could not wait to share this post with. Just because it involves luscious cookies recipe that taste super delicious! Think oatmeal chocolate chip cookies…soft with a slight crunch, loaded with white chocolate chips and vanilla flavour….
150 g white chocolate
125g unsalted softened butter
125g caster sugar
5ml vanilla essence
125g porridge oats, grounded
150 g plain white flour
2,5 ml baking powder
- Chop the white chocolate into small chunks, no larger than 1cm
- Cream the butter and sugar together in a bowl until pale and creamy. Add the egg, vanilla essence and grounded oats. Sift in plain flour and baking powder and mix until evenly combined. Stir in the chocolate chunks.
- Place spoonfuls of the mixture on two lightly greased baking sheets, spacing them well apart to allow room for spreading. Flatten each one slightly with the back of a fork.
- Bake at 180C (350F) Mark 4 for 12-15 minutes until risen and turning golden. Leave on the baking sheets for 5 minutes, then transfer to a wire rack to cool. Store in an airtight tin for up to 1 week.
