Soft white chocolate cookies

I’m not going to lie….I could not wait to share this post with. Just because it involves luscious cookies recipe that taste super delicious! Think oatmeal chocolate chip cookies…soft with a slight crunch, loaded with white chocolate chips and vanilla flavour….

150 g white chocolate

125g unsalted softened butter

125g caster sugar

1 egg

5ml vanilla essence

125g porridge oats, grounded

150 g plain white flour

2,5 ml baking powder

METHOD

  1. Chop the white chocolate into small chunks, no larger than 1cm
  2. Cream the butter and sugar together in a bowl until pale and creamy. Add the egg, vanilla essence and grounded oats. Sift in plain flour and baking powder and mix until evenly combined. Stir in the chocolate chunks.
  3. Place spoonfuls of the mixture on two lightly greased baking sheets, spacing them well apart to allow room for spreading. Flatten each one slightly with the back of a fork.
  4. Bake at 180C (350F) Mark 4 for 12-15 minutes until risen and turning golden. Leave on the baking sheets for 5 minutes, then transfer to a wire rack to cool. Store in an airtight tin for up to 1 week.
